pronouns as a whole are very important, I is a pronoun, their is a pronoun and you just used it as a singular pronoun!
what I don’t get is that you say that you don’t understand, but then proceed to say
I just call someone based on their gender like he or she.
but, you don’t always know the person
maybe you’re far away from that person and, as standard English goes, you’d use they pronouns to refer to that person you don’t know
much like how when referring to an unidentifiable object you’d use ‘that’ or ‘it’
