More specifically, Master Kohga, and such.

All bosses exept Master Kohga are re-fightable. The Guardian Scout minibosses in trials of strength are can be fought again, All the Blights (if you have Champion’s Ballad), good ol’ Calamity Ganon, Maz Koshia, Molduking and Igneo Talus Titan. Like i said, Master Kohga is the only boss you cannot re-fight.
