As far as a official sn mincraft sever goes, bedrock would be the more logical choice because it would allow for a better portion of players to use it.

I’ve lived on bedrock and education edition(bedrock but worse) for most of my life.
Use the plug-in that allows crossplay then, let the people choose. (Bedrock players would basically be getting the java version)
