These are the ones in the PS2 games
Its Claude from GTA 3, Tommy Vercetti from GTA Vice City, and CJ from GTA San Andreas.

Do something like Peaches Castle in Mario Kart 64, where it starts with you going around it, but it leads into the building and goes upwards
You could even make it end by you smashing through one of the windows at the top floor

That\’ll be Catalina for Claude, Ken Rosenberg for Tommy Vercetti, Big Smoke for CJ, and Roman Bellic for Niko Bellic.
