I’m planning on making a little animation test on how well I can animate an anime-style Pokemon battle. Any Ideas for what Pokemon should be fighting each other?

I’ll consider it, but I’d rather do a more epic battle between Pokemon that AREN’T in their first evolution.
For example, Scizor vs. Mewtwo, or Lucario vs. Swampert.
Choose 2 legendaries, since their movepool are cool, I suggest Lunala, for some epic flight cams and beam attacks, and one of the Island Guardians

Why? All of the moves I selected are stronger in base power than Brick Break.

You must have Brick Break confused with Rock Smash, because Brick Break just breaks through things like Light Screen. Have a look for yourself.
