it moves around the unloaded chunks for example you stand still you see the sun rise and set ect, you walk you always see the moon and or sun rise or set but the sun or moon never moves from its spot, if minecraft worlds are infinite indeed then the player is the center of the world which is loading chunks around the player in the middle and the empty space outside the chunks is how the sun / moon can set so even if you start to walk in any direction, then chunks will load and unload making free space for the sun / moon to rotate around the players world.
